Universal City, Texas · Certified Creole Louisiana Kitchen
Homemade boudin, catfish fried to order, and gumbo built the old-fashioned way — Sauce's Southern Kitchen brings authentic Cajun & Creole cooking to the food truck park off Lindbergh Blvd.
Our Story
Sauce's Southern Kitchen is a family-run Cajun & Creole food truck parked in a lively little food-truck park on W Lindbergh Blvd in Universal City. The trailer wears a "Certified Creole — A Louisiana Product" badge for a reason: owner Keyon Noel and the crew cook the way it's done back home, from the boudin to the roux, and locals and travelers passing through San Antonio have taken notice.
The menu leans into the dishes Louisiana kitchens are built on. Guests rave about the homemade boudin, catfish "fried and seasoned to protection," juicy fried pork chops, and a chicken and sausage gumbo loaded with seasoning. Red beans and rice, crispy fried wings, and a catfish-and-shrimp combo plate round out a menu that rewards showing up hungry.
What keeps people coming back is the welcome as much as the food — reviewers call out staff who are "professional and polite," and more than one out-of-towner has promised to swing back through Universal City just for another plate. As one guest put it, these are the folks who brought real Louisiana flavor to Texas.

"Homemade Boudin on point! Catfish fried and season to protection and the pork chops were so juicy! Gumbo had the tender chicken & sausage with all the seasoning to match. These men brought the Louisiana flavor to Texas & we enjoyed every bite!!! Next time we are in town we will definitely be returning for more!"
"Food is amazing. Went today got the catfish and shrimp plate. Food was well seasoned and crispy, the red beans are so good. I will definitely be back to try something else on the menu."
"In the area and I am glad to have stopped by. The pork chop is as advertised, fried to crispy goodness. The wings themselves were ok, but overall an excellent experience."
"It was delicious!!!! We had 3 fried catfish platters. So yummy! It had a nice crisp batter. Great flavor. They were big sized pieces too! The guy was very professional and polite. 10 out of 10, recommend!!"
